Catalans may go for unilateral declaration of independence

They can always start attacking their minorities and kill a few policemen to kick things off. K-Albanians did it and it worked like a charm. It drew Serbian army into it. By that time Albanians had all their ducks in the row and had paid a pretty penny for their propaganda and a few corrupt politicians in the US.
Obviously others have watched and learned and if peace fails they too can start a war and then claim victimhood. Sympathy will come to them too and a country leter.

IF facts were as you state, I would agree, but that is just not the case.
Before the US got involved in Kosovo, you had 4 UN resolutions condemning the violence and brutality of Serbia on the Albanian people and these were endorsed by both China and Russia, the 5th resolution ending it all was endorsed by Russia with China not opposing it.

The problem is there was no international support for an independent Kosovo in 1992 with its first declaration, that support only came from the brutality of Serbia over the next decade.
Catalonia does not have that to garner sympathy from the outside so it will be a test to see who will line up behind Spain on the issue and who will line up behind Catalonia.

I would only add that things like this inevitably deteriorate relationships that over time lead to final breakage, rupture, alienated sub-cultures. Once the cat is out of the bag, its hard to put it back in.

The question they need to answer though is can they garner international support for such a move. It is one thing to declare independence but you have to have support to make it work.
It is of a good size and the population is relative to Serbia. It is an economically successful region, and has an established infrastructure and an autonomous government in place so it would not be like having to build from the surface up such as in Kosovo, where the attempt is to build a state from rubble.
